This short-run menu embraces autumn without losing the essence of our cuisine: local produce, precise technique and balanced flavours. Pumpkin brings sweetness and silkiness; guanciale adds smoky, savoury depth; a shower of pecorino and herbs from our garden completes the dish. We pair it with a pumpkin cocktail made from real purée, gentle spices and Maltese citrus.
